Although its popularity has declined in recent years, tripe is still eaten by many pensioners in parts of Yorkshire and artisan brasseries in Peckham. However, it is now widely recognised as a hallucinogen, and when ingested, routinely creates the impression that it’s actually edible.
Honeycomb tripe – which is prepared from the smaller reticulum of Gordon Honeycombe, the former ITN newsreader – is considered a particular delicacy, especially now that News at Ten has been replaced by nightly helpings of tripe presented by Gordon Ramsay.
The traditional accompaniment for tripe is caramelised bunions.
